  • Garlic powder – 1/2 teaspoon
  • Salt – 1/4 teaspoon, or more to taste
  • Cracked black pepper – 1/4 teaspoon
  • Fresh parsley – 1 tablespoon, chopped, for a beautiful garnish

Instructions
 

Prep the Carrots

  • Peel your carrots and slice them diagonally into even half-inch thick pieces. Cutting them to the same size ensures they all cook at the exact same rate.

Mix the Honey Glaze

  • In your large mixing bowl, whisk the olive oil, melted butter, honey, garlic powder, salt, and black pepper together until smooth.

Toss the Carrots

  • Add the sliced carrots to the bowl. Use a spoon or clean hands to toss them until every carrot is well coated in glaze.

Preheat the Air Fryer

  • Turn on your air fryer and set the temperature to 380°F. Let it heat up for about three to five minutes before adding food.

Cook the Carrots

  • Place the glazed carrots into the air fryer basket in a single layer. Cook them at 380°F for a total of fifteen minutes.

Shake the Basket

  • Halfway through cooking, pull out the basket and give it a good shake. This helps the carrots brown evenly on all sides.

Garnish and Serve

  • Transfer the hot, caramelized carrots to a serving dish. Sprinkle the chopped fresh parsley on top and serve them immediately.

Notes

  • Try different herbs: Swap the parsley for fresh thyme or rosemary. These woody herbs pair beautifully with the sweetness of the honey.
  • Make it spicy: Add a pinch of cayenne pepper or red pepper flakes to the glaze. The sweet and spicy kick is absolutely delicious.
  • Do not overcrowd the basket: Cook in batches if your air fryer is small. Crowding the carrots will make them steam instead of roast.
  • Use baby carrots: If you want to save prep time, you can use pre-washed baby carrots. Just reduce the cooking time by three minutes.

  • Refrigerating leftovers: Store any leftover carrots in an airtight container in the fridge. They will stay fresh and tasty for up to four days.

  • Reheating in the air fryer: Warm the carrots in your air fryer at 350°F for three to five minutes to make them crispy again.
  • Reheating in the microwave: You can microwave them for one minute, but they will lose their roasted texture and become soft.
