Ingredients
  

  • Almond flour – 2 cups
  • Unsweetened cocoa powder – ½ cup
  • Baking soda – 1 teaspoon

  • Maple syrup – ½ cup
  • Coconut oil – ¼ cup, melted
  • Eggs – 3 large
  • Vanilla extract – 1 teaspoon

Instructions
 

Prepare the Oven and Pan

  • Preheat your oven to 350°F and line a cupcake pan with paper liners. This step helps cupcakes bake evenly and prevents sticking later. Preparing the pan first makes the whole baking process smoother.

Mix the Dry Ingredients

  • In a large mixing bowl, add almond flour, cocoa powder, baking soda, and salt. Whisk everything together slowly until the mixture looks even and smooth without lumps.

Prepare the Wet Ingredients

  • In another bowl, whisk together maple syrup, melted coconut oil, eggs, vanilla extract, and almond milk. Mix until the liquid ingredients become smooth and slightly creamy.

Combine the Batter

  • Pour the wet mixture into the bowl with dry ingredients. Stir gently using a spatula. Mix just until the batter looks smooth and thick without overmixing.

Add Chocolate Chips

  • Fold the dark chocolate chips into the batter if using them. Stir carefully so the chips spread evenly through the batter and every cupcake gets chocolate flavor.

Fill the Cupcake Liners

  • Spoon the batter evenly into the prepared cupcake liners. Fill each liner about three quarters full so the cupcakes have room to rise while baking.
