Equipment

  • Sharp chef’s knife For slicing and chopping
  • Sturdy cutting board
  • Medium mixing bowl
  • Mixing spoon or spatula
  • Metal spoon To scoop out the cucumber seeds
  • Paper towels To dry the cucumber boats

Ingredients

  • 2 large English cucumbers, Thin skins and fewer seeds work best
  • 2 cups cooked chicken breast, Shredded rotisserie or cubed leftover chicken
  • 4 slices bacon, Cooked until crispy and crumbled
  • 0.5 cup mayonnaise, Creates a rich, creamy base
  • 0.25 cup sour cream, Adds a lovely subtle tanginess
  • 1 packet ranch seasoning mix, Gives the signature herby, savory flavor
  • 0.5 cup shredded cheddar cheese, Mild or sharp cheddar works beautifully
  • 2 tablespoons fresh chives, Finely chopped for a bright onion-like garnish
  • Salt and black pepper, Add to taste at the very end

Instructions

Prep the Cucumbers

  • Wash your English cucumbers thoroughly and pat them dry with a clean towel. Cut them in half lengthwise. Use a metal spoon to gently scrape out the watery seeds to create a hollow boat shape.

Dry the Cucumber Boats

  • Place the hollowed-out cucumbers cut-side down on a few sheets of paper towels. Let them drain for about five minutes. This step is crucial because it keeps your boats from becoming too watery later on.

Mix the Creamy Dressing

  • In your medium mixing bowl, combine the mayonnaise, sour cream, and ranch seasoning packet. Stir the mixture vigorously until it is completely smooth and free of lumps. Taste it to ensure the flavor is perfect.

Combine the Salad Ingredients

  • Add the shredded chicken, crumbled bacon, and shredded cheddar cheese to the bowl with the ranch dressing. Stir everything together gently until all the ingredients are evenly coated in the creamy sauce.

Stuff the Cucumber Boats

  • Spoon the chicken salad mixture generously into the hollowed-out cucumber halves. Press the filling down gently so it stays in place. Make sure to divide the chicken salad evenly among all four boats.

Garnish and Serve

  • Sprinkle the chopped fresh chives over the top of the stuffed boats for a pop of color. You can also add a pinch of black pepper. Slice each boat into smaller pieces or serve them whole.

Notes

  • Always dry your hollowed cucumbers with paper towels to prevent a soggy mess.
  • Swap mayonnaise and sour cream for plain Greek yogurt to make this recipe lighter.
  • Add a few splashes of hot sauce or chopped jalapeños for a spicy kick.
  • Store leftovers in an airtight container in the refrigerator and eat them within 24 hours.
  • For longer storage, keep the chicken salad and the empty cucumber boats in separate containers and assemble right before serving.
