Equipment

  • Large mixing bowl
  • Hand mixer or stand mixer
  • Measuring cups and spoons
  • Baking sheet
  • Parchment paper
  • Cookie scoop or spoon
  • Cooling rack
  • Rubber spatula

Ingredients

  • 1 cup unsalted butter, softened
  • 1 1/4 cups brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup caramel bits or chopped soft caramel candies
  • 1/2 cup white chocolate chips, optional
  • flaky sea salt, optional topping

Instructions

Prepare the oven and pans

  • Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper. This helps the cookies bake evenly and prevents sticking. Set everything nearby before mixing the dough.

Cream the butter and sugars

  • Place softened butter, brown sugar, and granulated sugar into a large bowl. Beat until light and fluffy. This step gives the cookies a soft texture and rich flavor.

Add eggs and vanilla

  • Crack the eggs into the bowl one at a time. Mix well after each addition. Pour in the vanilla extract and stir again until smooth and creamy.

Mix the dry ingredients

  • In another bowl, combine flour, baking soda, baking powder, and salt. Stir gently with a spoon or whisk. This helps spread the ingredients evenly through the dough.

Combine wet and dry mixtures

  • Slowly add the dry ingredients into the butter mixture. Mix until a soft dough forms. Do not overmix because it can make the cookies dense instead of soft.

Fold in caramel pieces

  • Add caramel bits and white chocolate chips if using them. Fold gently with a spatula. The caramel pieces melt beautifully and create gooey pockets inside each cookie.

Scoop the cookie dough

  • Use a cookie scoop or spoon to place dough balls onto the prepared baking sheet. Leave space between each cookie because they spread while baking.

Bake the cookies

  • Bake for 10 to 12 minutes until the edges turn lightly golden. The centers may still look soft, which is perfect. They continue cooking while cooling.

Cool before serving

  • Let the cookies rest on the baking sheet for five minutes. Move them to a cooling rack afterward. Sprinkle flaky sea salt on top for extra flavor if desired.

Notes

  • Chill the dough for thicker cookies
  • Use dark brown sugar for deeper caramel flavor
  • Add chopped pecans for extra crunch
  • Do not overbake the cookies to keep them soft and chewy
  • Store cookies in an airtight container for up to five days
  • Freeze cookie dough balls and bake fresh later
  • Warm cookies in the microwave for 10 seconds before serving
  • Serve with coffee, milk, or vanilla ice cream
