Equipment

  • 9x13-inch baking dish
  • Large skillet
  • High-speed blender or food processor
  • Cutting board
  • Sharp chef’s knife
  • Wooden spoon or spatula
  • Measuring cups and spoons

Ingredients

  • 1.5 lbs chicken breast, cut into bite-sized cubes
  • 2 cups cottage cheese, full-fat or 2%
  • 1 packet (1 oz) fajita seasoning, low-sodium
  • 1 medium red bell pepper, sliced into thin strips
  • 1 medium green bell pepper, sliced into thin strips
  • 1 medium yellow onion, sliced thin
  • 1 cup Mexican blend cheese, shredded
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • Fresh cilantro, chopped (for garnish)

Instructions

Prep the Oven and Pan

  • Preheat your oven to 375°F (190°C) so it reaches temperature quickly. Lightly grease a 9x13 inch baking dish with cooking spray or a drop of olive oil. Set the prepared dish aside while you chop your colorful fresh ingredients.

Blend the Creamy Sauce

  • Place the cottage cheese into a blender or food processor with half of the fajita seasoning, garlic powder, salt, and pepper. Blend on high speed for one minute until the cheese turns completely smooth and silky with no visible curds remaining.

Sauté the Veggies

  • Heat olive oil in a large skillet over medium heat on your stove. Add the sliced bell peppers and onions, cooking for five minutes until soft and fragrant. Transfer the cooked vegetables into your prepared baking dish, spreading them evenly across the bottom.

Season and Layer the Chicken

  • In the same skillet or a medium bowl, toss the diced chicken with the remaining fajita seasoning until fully coated. Lay the raw seasoned chicken cubes directly over the warm layer of cooked peppers and onions in the baking dish.

Pour and Top

  • Pour your blended creamy cottage cheese sauce evenly over the chicken and vegetable layers. Stir gently with a spoon to combine everything slightly. Top the whole dish evenly with your shredded Mexican blend cheese for a golden, bubbly finish.

Bake and Serve

  • Bake uncovered for 30 to 35 minutes until the chicken reaches an internal temperature of 165°F. The cheese on top should be melted and slightly golden brown. Let it cool for five minutes, then garnish with fresh cilantro before serving.

Notes

  • Blend the cottage cheese thoroughly to create a completely silky sauce that mimics heavy cream or sour cream.
  • Use boneless chicken thighs instead of chicken breasts if you prefer extra juicy meat that resists drying out.
  • Swap the store-bought taco or fajita seasoning for a homemade blend of cumin, chili powder, and paprika to control sodium.
  • Add canned black beans or sweet corn to the vegetable layer to increase the fiber content and bulk up the meal.
  • Top with sliced jalapeños or a dash of cayenne pepper if you enjoy extra heat in your fajita dishes.
  • Store cooled leftovers in an airtight container in the refrigerator for up to four days.
  • Reheat individual portions in the microwave for 90 seconds, stopping halfway to stir gently.
