Equipment

  • Blender or food processor
  • Medium saucepan
  • Measuring cups
  • Measuring spoons
  • Rubber spatula
  • Serving bowl
  • Spoon for stirring

Ingredients

  • Cottage cheese – 2 cups
  • Shredded cheddar cheese – 1 cup
  • Cornstarch – 1 tablespoon
  • Milk – 1/2 cup
  • Diced green chilies – 1 can (4 ounces)
  • Garlic powder – 1 teaspoon
  • Onion powder – 1 teaspoon
  • Smoked paprika – 1/2 teaspoon
  • Salt – 1/2 teaspoon
  • Black pepper – 1/4 teaspoon
  • Lime juice – 1 tablespoon
  • Cilantro – 2 tablespoons, chopped

Instructions

Blend the Cottage Cheese

  • Add the cottage cheese to a blender or food processor. Blend until completely smooth and creamy. This step is important because it removes the curds and creates a texture that looks and tastes like traditional queso.

Prepare the Cheese Mixture

  • In a small bowl, toss the shredded cheddar cheese with cornstarch. This helps the cheese melt smoothly later. It also prevents the dip from becoming grainy or separating during cooking.

Heat the Base

  • Pour the blended cottage cheese into a medium saucepan. Add the milk, garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir well and heat over medium-low heat until warm.

Add the Cheddar Cheese

  • Slowly add the cheddar cheese mixture while stirring constantly. Continue stirring as the cheese melts. The dip will become thicker and creamier. Take your time to ensure everything blends together smoothly.

Mix in the Chilies

  • Add the diced green chilies and lime juice. Stir well until evenly combined. The chilies add a mild kick while the lime juice brightens the flavor and balances the richness.

Finish the Dip

  • Continue cooking for another two to three minutes. Stir often to keep the dip smooth. Once it reaches your desired consistency, remove it from the heat and stir in the cilantro.

Serve and Enjoy

  • Transfer the warm dip to a serving bowl. Garnish with extra cilantro if desired. Serve immediately with tortilla chips, vegetables, crackers, or your favorite dipping snacks.

Notes

  • Use full-fat cottage cheese for the creamiest texture.
  • Blend the cottage cheese very well for a smooth dip.
  • Add jalapeños for extra heat.
  • Mix in cooked ground beef for a heartier appetizer.
  • Use pepper jack cheese instead of cheddar for a spicy twist.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Reheat gently on the stovetop and add a splash of milk if needed.
  • Serve with tortilla chips, pretzel bites, vegetables, tacos, or nachos.
