Equipment

  • Blender or food processor
  • Mixing bowl
  • Measuring cups and spoons
  • Nonstick skillet
  • Spatula
  • Parchment paper
  • Baking sheet
  • Cooling rack

Ingredients

  • Cottage cheese – 1 cup
  • Large eggs – 2
  • Grated parmesan cheese – ¼ cup
  • Garlic powder – 1 teaspoon
  • Onion powder – ½ teaspoon
  • Salt – ½ teaspoon
  • Black pepper – ¼ teaspoon
  • Chopped parsley – 1 tablespoon
  • Cooking spray or olive oil, for the pan
  • Sliced turkey, optional filling
  • Lettuce, optional filling
  • Tomato slices, optional filling
  • Avocado, optional filling
  • Grilled chicken, optional filling
  • Spinach leaves, optional filling
  • Shredded carrots, optional filling

Instructions

Prepare the Baking Sheet

  • Preheat your oven to 375 degrees Fahrenheit. Line a baking sheet with parchment paper and lightly spray it with cooking spray. This helps the wraps release easily after baking and prevents sticking.

Blend the Cottage Cheese Mixture

  • Add cottage cheese, eggs, parmesan cheese, garlic powder, onion powder, salt, black pepper, and parsley into a blender. Blend until smooth and creamy. The mixture should look silky without large cottage cheese pieces remaining.

Spread the Batter Evenly

  • Pour the mixture onto the prepared baking sheet. Use a spatula to spread it into thin circles or rectangles. Keeping the batter thin helps create flexible wraps that fold easily without breaking.

Bake the Wraps

  • Place the baking sheet into the oven and bake for 12 to 15 minutes. The edges should look lightly golden and firm. The center should feel cooked but still soft enough to bend.

Cool Before Removing

  • Remove the wraps from the oven and let them cool for several minutes. This step is important because warm wraps can tear easily. Cooling helps them become stronger and easier to handle.

Add Your Favorite Fillings

  • Fill each wrap with turkey, vegetables, grilled chicken, or avocado. Keep fillings balanced so the wraps stay easy to roll. Fresh crunchy vegetables make every bite taste bright and delicious.

Roll and Serve

  • Carefully roll each wrap tightly while holding the fillings inside. Slice them in half if desired. Serve immediately for the best texture while the wraps stay soft and fresh.

Notes

  • Use full-fat cottage cheese for creamier wraps
  • Blend the mixture very well for smooth texture
  • Add spinach for extra color and nutrients
  • Let wraps cool before peeling from parchment paper
  • Store wraps flat to avoid cracking
  • Reheat gently in a skillet for best texture
