Equipment

  • Large skillet
  • Mixing bowl
  • Measuring cups
  • Measuring spoons
  • Tongs
  • Sharp knife
  • Cutting board
  • Small whisk
  • Serving platter

Ingredients

  • Boneless skinless chicken breasts – 4
  • Salt – 1 teaspoon
  • Black pepper – ½ teaspoon
  • Garlic powder – 1 teaspoon
  • Paprika – 1 teaspoon
  • Olive oil – 1 tablespoon
  • Unsalted butter – 6 tablespoons
  • Garlic – 4 cloves, minced
  • Dijon mustard – 1 tablespoon
  • Fresh lemon juice – 1 tablespoon
  • Red pepper flakes – 1 teaspoon
  • Fresh parsley – 1 tablespoon, chopped
  • Fresh thyme – 1 teaspoon, chopped
  • Onion powder – ½ teaspoon
  • Cayenne pepper – ¼ teaspoon
  • Salt – ¼ teaspoon

Instructions

Season the Chicken

  • Pat the chicken breasts dry with paper towels. Sprinkle both sides with salt, pepper, garlic powder, and paprika. This seasoning layer creates great flavor and helps the chicken develop a beautiful golden crust while cooking.

Heat the Skillet

  • Place a large skillet over medium-high heat. Add the olive oil and allow it to heat for about one minute. A properly heated pan helps the chicken cook evenly and prevents sticking.

Cook the Chicken

  • Carefully place the seasoned chicken into the hot skillet. Cook for about six to seven minutes per side. The outside should become golden brown while the inside stays juicy and tender.

Remove and Rest

  • Transfer the cooked chicken to a clean plate. Let it rest for several minutes while preparing the sauce. Resting allows the juices to stay inside the meat, keeping every bite moist.

Start the Cowboy Butter Sauce

  • Reduce the heat to medium-low. Add the butter to the same skillet. Allow it to melt completely while scraping up any flavorful browned bits left behind from the chicken.

Add the Flavorings

  • Stir in the minced garlic, Dijon mustard, lemon juice, red pepper flakes, parsley, thyme, onion powder, cayenne pepper, and salt. Mix everything together until the ingredients become fragrant and well blended.

Simmer the Sauce

  • Let the sauce cook gently for two to three minutes. The butter will absorb all the herbs and spices. The aroma at this stage is incredible and fills the entire kitchen.

Return the Chicken

  • Place the rested chicken back into the skillet. Spoon the cowboy butter sauce over each piece. Let everything cook together for two more minutes so the flavors fully combine.

Serve and Enjoy

  • Transfer the chicken to a serving platter. Drizzle the remaining sauce over the top. Garnish with extra parsley if desired and serve immediately while warm and juicy.

Notes

  • Use chicken thighs instead of breasts for extra richness.
  • Add extra red pepper flakes if you enjoy more heat.
  • Fresh herbs provide the best flavor.
  • Do not overcook the chicken.
  • Use a meat thermometer and cook chicken to 165°F.
  • Add mushrooms to the skillet for extra texture.
  • Stir in a little honey for sweetness.
  • Serve with rice, mashed potatoes, or roasted vegetables.
  • Store leftovers in an airtight container for up to 4 days.
  • Reheat gently in a skillet with a splash of broth if needed.
