Ingredients
  

  • Medjool dates – 2 cups, pitted
  • Almond flour – 1 cup
  • Cocoa powder – 1 tablespoon

  • Maple syrup – 1 tablespoon
  • Dark chocolate chips – 1 cup

Instructions
 

Prepare the Pan

  • Line an 8x8-inch baking dish with parchment paper. Leave some paper hanging over the sides. This makes it easier to remove the bars later and keeps cleanup quick and simple.

Make the Date Base

  • Place the dates, almond flour, cocoa powder, and vanilla extract into a food processor. Blend until the mixture becomes sticky and smooth. It should hold together easily when pressed between your fingers.

Press the Base into the Pan

  • Transfer the date mixture into the prepared pan. Press it firmly into an even layer using your hands or the back of a spoon. Make sure the surface is smooth and compact.

Create the Peanut Layer

  • In a mixing bowl, combine peanut butter, roasted peanuts, and maple syrup. Stir until everything is well mixed. The mixture should be thick, crunchy, and easy to spread over the base.

Add the Peanut Mixture

  • Spread the peanut mixture evenly over the date layer. Use a spatula to smooth the top. Try to cover every corner so each bar has the perfect balance of flavors.

Melt the Chocolate

  • Place the chocolate chips and coconut oil into a microwave-safe bowl. Heat in short intervals, stirring often. Continue until the chocolate becomes smooth, glossy, and completely melted.

Add the Chocolate Layer

  • Pour the melted chocolate over the peanut layer. Spread it evenly across the surface. Sprinkle chopped peanuts and a little flaky sea salt on top if desired.

Chill Until Firm

  • Place the dish in the refrigerator for about one hour. The chocolate should become firm and easy to slice. Chilling also helps all the layers set properly.

Slice and Serve

  • Lift the bars from the pan using the parchment paper. Place them on a cutting board and cut into squares or rectangles. Serve immediately or store for later.
