- 2 medium cucumbers, (peeled and finely chopped, seeds removed if you want a thicker dip)
- 1 package cream cheese, softened
- 16 oz sour cream
- 1 packet ranch dip, seasoning mix
Peel the cucumbers and chop them into small, even pieces. If you’d like to avoid extra liquid in the dip, slice them lengthwise first and scoop out the seeds before chopping. Set aside.
Place the softened cream cheese in a medium mixing bowl. Use a hand mixer to beat until smooth and fluffy. Mix in the sour cream and blend until the mixture is smooth, creamy, and fully combined.
Sprinkle in the ranch dip seasoning and mix until the flavoring is fully incorporated. Taste and adjust if you prefer a stronger seasoning.
Gently stir in the chopped cucumbers until they are evenly distributed throughout the creamy base.
Place the bowl in the refrigerator and let the dip chill for at least an hour so the flavors can blend together. Chilling helps the flavors come together and makes the dip extra refreshing.
Transfer the dip to a serving bowl and pair it with tortilla chips, pita chips, crackers, or an assortment of fresh vegetables.
