  • Olive oil or butter – 1 tablespoon
  • Diced onion – 1/4 cup
  • Diced bell pepper – 1/4 cup
  • Small jalapeño – 1, finely chopped
  • Diced tomatoes – 1/2 cup
  • Shredded cheddar cheese – 1/2 cup
  • Chopped cilantro – 2 tablespoons
  • Green onion – 1, sliced
  • Salsa – for serving
  • Avocado slices – optional

Instructions

Prepare the Vegetables

  • Wash and chop all the vegetables before cooking. Dice the onion, bell pepper, and tomatoes into small pieces. Finely chop the jalapeño carefully. Preparing ingredients first makes cooking the Easy Mexican Omelette Recipe much smoother.

Beat the Eggs

  • Crack the eggs into a mixing bowl. Add milk, salt, and black pepper. Whisk everything together until smooth and slightly frothy. Mixing well helps create soft and fluffy eggs with better texture.

Cook the Vegetables

  • Heat olive oil or butter in a nonstick skillet over medium heat. Add onions and bell peppers first. Cook for about three minutes. Stir in jalapeño and tomatoes until everything becomes soft and fragrant.

Add the Egg Mixture

  • Pour the beaten eggs into the skillet over the vegetables. Tilt the pan gently so the eggs spread evenly. Let the eggs cook quietly for one minute without stirring too much during cooking.

Add the Cheese and Herbs

  • Sprinkle shredded cheddar cheese, cilantro, and sliced green onion over one side of the omelette. The cheese melts beautifully while the fresh herbs add bright flavor and freshness to every bite.

Fold the Omelette Carefully

  • Use a spatula to gently fold the empty side of the omelette over the filling. Press lightly so it stays together. Cook for another minute until the cheese melts completely inside.

Serve While Warm

  • Slide the Easy Mexican Omelette onto a serving plate carefully. Add salsa and avocado slices on top if desired. Serve immediately while warm for the best flavor and soft texture.

Notes

  • Use fresh vegetables for the best flavor and texture.
  • Do not cook eggs over high heat because they can dry out quickly.
  • Add cooked chicken or sausage for extra protein.
  • Use pepper jack cheese for a spicier omelette.
  • Serve with warm tortillas, salsa, or avocado slices.
  • Store leftovers in the refrigerator for up to 2 days.
  • Reheat gently in a skillet or microwave for the best texture.
