- 3 (about 2 cups, chopped) Ripe mangoes
- 1 1/2 cups Chopped pineapple
- 1/2 cup Dairy-free or regular Greek yogurt, (optional)
- 2 tbsp Lime juice
- 2 tbsp Honey, (or to taste)
- 2 tsp Vanilla extract
Combine the mango, pineapple, Greek yogurt (if using), lime juice, honey, and vanilla extract in a high-speed blender or food processor. Blend until smooth and creamy.
Sample the mixture and modify the sweetness according to your preference. If the fruit is naturally sweet enough, you may not need extra honey. For a tangier popsicle, add a bit more lime juice.
Pour the blended mixture into popsicle molds, leaving a small gap at the top to allow room for expansion. Insert the sticks and gently tap the molds to remove any air bubbles.
Transfer the molds to the freezer and let them freeze for at least 6 hours, or overnight for the best texture.
To remove the popsicles easily from the molds, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out and enjoy your tropical treat!
