  • Measuring cups and spoons
  • Rubber spatula
  • Cooling rack
  • Parchment paper
  • Saucepan for heating liquids
  • Toothpick for checking doneness

Ingredients

  • Gluten-free all-purpose flour – 1 ½ cups
  • Baking soda – 1 tsp
  • Ground ginger – 2 tsp
  • Ground cinnamon – 1 tsp
  • Ground cloves – ½ tsp
  • Salt – ¼ tsp
  • Unsalted butter – ½ cup, softened
  • Brown sugar – ¾ cup, packed
  • Egg – 1 large
  • Molasses – ⅓ cup
  • Milk (dairy or non-dairy) – ½ cup
  • Optional: powdered sugar or glaze for topping

Instructions

Preheat Oven

  • Preheat oven to 350°F. Grease cake pan and line with parchment to prevent sticking.

Mix Dry Ingredients

  • In a medium bowl, whisk gluten-free flour, baking soda, ginger, cinnamon, cloves, and salt until well combined.

Cream Butter and Sugar

  • In a large bowl, beat softened butter and brown sugar until light and fluffy for a tender cake.

Add Egg and Molasses

  • Add egg and molasses to butter mixture. Beat until smooth. Molasses gives moist texture and deep flavor.

Combine Dry and Wet Ingredients

  • Gradually add dry ingredients alternately with milk. Stir gently until batter is smooth and fully combined.

Pour Batter

  • Pour batter into prepared pan and smooth the top for even baking and a flat surface.

Bake Cake

  • Bake 35–40 minutes until a toothpick inserted comes out clean. Cake is golden and fragrant when done.

Cool Cake

  • Cool 10–15 minutes in pan, then transfer to a cooling rack until completely cool before serving.

Add Toppings

  • Dust with powdered sugar, drizzle glaze, or serve with whipped cream for a festive, delicious finish.

Notes

  • Use room-temperature ingredients for best texture
  • Measure flour carefully to avoid dryness
  • Optional toppings: powdered sugar, glaze, or whipped cream
  • Store in airtight container for freshness up to 3 days
