  • Baking powder – 2 tsp
  • Baking soda – 1 tsp
  • Salt – ½ tsp
  • Unsalted butter – 1 cup, softened
  • Granulated sugar – 1 ¼ cups

  • Vanilla extract – 2 tsp
  • Milk – 1 cup, dairy or non-dairy
  • Cocoa powder – ¼ cup
  • Hot water – 3 tbsp
  • Optional: powdered sugar or chocolate glaze for topping

Instructions

Prepare Pan

  • Grease a 10-inch Bundt pan with butter or non-stick spray. Dust with gluten-free flour. Set aside to prevent sticking.

Mix Dry Ingredients

  • In a medium bowl, whisk gluten-free flour, baking powder, baking soda, and salt. Mix well to remove lumps.

Cream Butter and Sugar

  • In a large bowl, beat softened butter and sugar until fluffy. This creates a light, airy base for the cake.

Add Eggs and Vanilla

  • Add eggs one at a time, mixing well. Stir in vanilla extract until the batter is smooth and creamy.

Combine Batter

  • Alternate adding dry ingredients and milk to the batter, starting and ending with dry ingredients. Stir gently to avoid overmixing.

Prepare Chocolate Batter

  • Mix cocoa powder with hot water until smooth. Take about 1 cup of vanilla batter and fold in cocoa mixture for chocolate portion.

Layer Batters

  • Layer batters in the Bundt pan. Pour half vanilla, spoon chocolate, then remaining vanilla. Swirl gently with a knife to create marble effect.

Bake Cake

  • Bake at 350°F for 45 minutes or until a toothpick inserted comes out clean. Cake should rise evenly and smell fragrant.

Cool Cake

  • Cool the cake in pan for 10 minutes. Invert onto a cooling rack. Let it cool completely before slicing.

Add Toppings

  • Optional: Dust with powdered sugar or drizzle chocolate glaze. Serve with berries or whipped cream if desired.

Notes

  • Use room-temperature eggs and butter for a smooth batter
  • Swirl gently to maintain the marble pattern
  • Store in airtight container up to 3 days
  • Freeze slices for up to 2 months
