Ingredients
  

  • Gluten-free all-purpose flour – 2 cups
  • Baking powder – 2 tsp
  • Baking soda – 1 tsp
  • Salt – ½ tsp
  • Unsalted butter – ¾ cup, softened
  • Granulated sugar – 1 cup
  • Brown sugar – ¼ cup, packed
  • Eggs – 3 large
  • Vanilla extract – 2 tsp
  • Peppermint extract – 1 tsp
  • Milk – ¾ cup, dairy or non-dairy
  • Chocolate chips – 1 cup
  • Optional: mint chocolate pieces, for decoration

Instructions
 

Preheat Oven

  • Preheat oven to 350°F (175°C). Grease a 9-inch cake pan and lightly dust with gluten-free flour.

Mix Dry Ingredients

  • In a medium bowl, whisk together gluten-free flour, baking powder, baking soda, and salt until smooth and lump-free.

Cream Butter and Sugars

  • In a large bowl, beat softened butter, granulated sugar, and brown sugar until fluffy and light using a mixer.

Add Eggs and Extracts

  • Add eggs one at a time, mixing well after each addition. Stir in vanilla and peppermint extracts until smooth and aromatic.

Combine Dry Ingredients and Milk

  • Alternate adding dry ingredients and milk to the wet mixture, starting and ending with dry ingredients, mixing gently for tender cake.

Fold in Chocolate Chips

  • Fold chocolate chips into the batter carefully. Reserve some for topping if desired to enhance chocolatey pockets.

Pour Batter into Pan

  • Pour batter into prepared cake pan. Smooth top and sprinkle optional chocolate or mint pieces on top for decoration.

Bake Cake

  • Bake at 350°F for 35 minutes. Insert a toothpick into the center; it should come out clean. Cool for 10 minutes in pan.

Cool and Serve

  • Transfer cake to a cooling rack to cool completely. Serve plain or decorate with powdered sugar, chocolate drizzle, or whipped cream.
