Ingredients
  

  • 1 cup Peanut butter, smooth or crunchy
  • 1/2 cup Brown sugar or coconut sugar
  • 1/4 cup White sugar
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1/2 cup Chocolate chips, optional

Instructions
 

Preheat oven

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

Mix wet ingredients

  • In a mixing bowl, combine peanut butter, brown sugar, white sugar, egg, and vanilla. Stir until smooth and creamy.

Add dry ingredients

  • Add baking soda and salt to the mixture. Stir until fully combined.

Fold in chocolate

  • If using chocolate chips, fold them into the dough evenly with a spatula.

Shape cookies

  • Scoop tablespoon-sized portions of dough and roll into balls. Place on prepared baking sheet, spacing 2 inches apart.

Flatten cookies

  • Gently press each cookie with a fork in a crisscross pattern to flatten slightly.

Bake

  • Bake for 10–12 minutes until edges are golden and centers are soft.

Cool cookies

  • Cool on baking sheet for 5 minutes. Transfer to cooling rack to cool completely before serving.

Notes

  • Use smooth peanut butter for creamy texture
  • Do not overbake to keep cookies soft and chewy
  • Store in airtight container for 3–4 days or freeze for later
  • Add chocolate chips for extra sweetness
