Ingredients
  

  • 2 cups gluten-free all-purpose flour blend
  • 1 ½ cups sugar
  • ½ cup cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup unsweetened almond milk, or any plant milk
  • 2 tsp apple cider vinegar
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 2 large eggs
  • 1 tsp red food coloring, natural or artificial
  • ½ cup vegan chocolate chips, optional, for chocolate swirl
  • 1 cup vegan butter, softened
  • 2 cups powdered sugar
  • ¼ cup cocoa powder
  • 2-3 tbsp plant milk
  • 1 tsp vanilla extract

Instructions
 

Preheat Oven

  • Preheat oven to 350°F (175°C). Line two 9-inch cake pans with parchment paper and lightly grease the sides.

Mix Wet Ingredients

  • In a bowl, combine almond milk and apple cider vinegar. Let sit 5 minutes to make vegan buttermilk, then whisk in oil, vanilla, eggs, and red food coloring until smooth.

Mix Dry Ingredients

  • In a large bowl, whisk gluten-free flour, sugar, cocoa powder, baking powder, baking soda, and salt. Ensure there are no lumps for smooth batter.

Combine Wet and Dry

  • Gradually add wet mixture to dry ingredients. Stir gently with spatula until just combined. Avoid overmixing to keep cake light and fluffy.

Prepare Chocolate Swirl

  • If using chocolate chips, melt them and add a few spoonfuls to half of the batter. Mix gently to create a chocolate swirl.

Create Marble Effect

  • Alternately spoon red velvet and chocolate batters into cake pans. Use a knife or skewer to gently swirl for a marbled pattern. Do not over-swirl.

Bake Cakes

  • Bake cakes in preheated oven for 35–40 minutes. Check doneness with a toothpick; it should come out mostly clean. Cool in pans 10 minutes before removing.

Cool Cakes

  • Transfer cakes to a cooling rack. Let cool completely before frosting to prevent melting and ensure smooth frosting.

Prepare Frosting

  • Beat vegan butter until creamy. Gradually add powdered sugar and cocoa powder. Add plant milk and vanilla until smooth and spreadable.

Frost and Assemble

  • Frost one cake layer, place second on top, and finish with frosting. Decorate with sprinkles, cocoa powder, or chocolate chips if desired.
