Equipment

  • Heavy cast iron skillet or flat griddle pan
  • Wide spatula for easy flipping
  • Medium glass mixing bowl
  • Sharp chef knife and cutting board
  • Butter knife for spreading butter
  • Paper towels for draining excess grease
  • Small glass cup for measuring sauce

Ingredients

  • Ground beef – 1 pound, 80/20 lean to fat ratio works best
  • White or sourdough sandwich bread – 8 thick slices
  • American cheese or sharp cheddar cheese – 8 slices
  • Softened butter – 4 tablespoons, for spreading
  • Garlic powder – 1 teaspoon
  • Salt – 1 teaspoon
  • Ground black pepper – 1/2 teaspoon
  • Yellow onion – 1/2 cup, finely diced
  • Thousand Island dressing or secret burger sauce – 4 tablespoons

Instructions

Shape and Season the Patties

  • Divide the ground beef into four equal portions inside your mixing bowl. Shape each portion into a flat square patty matching your bread shape. Season both sides with salt, black pepper, and garlic powder.

Cook the Beef Patties

  • Heat your cast iron skillet over medium-high heat until very hot. Cook the patties for four minutes per side until nicely browned. Add diced onions during the last minute, then transfer patties to a plate.

Butter the Bread Slices

  • Spread softened butter evenly over one side of all eight bread slices. Make sure to cover the edges completely so every bite gets golden brown. Place four slices buttered-side down on your clean cutting board.

Assemble the Layers

  • Place one slice of cheese onto each unbuttered side of bread. Top with a cooked beef patty, a spoonful of burger sauce, and another cheese slice. Top with the remaining bread slices, buttered-side facing outward.

Toast the Sandwiches

  • Place assembled sandwiches into the skillet over medium-low heat. Cook for three minutes per side until the bread turns golden crisp. Cover the pan briefly with a lid so the inner cheese melts completely.
