Ingredients
  

  • 1.5 lbs lean ground turkey
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp dried oregano
  • 1 tsp dried dill
  • 1 tsp ground cumin
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups cooked rice, quinoa, or cauliflower rice
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup tzatziki sauce
  • 1/4 cup Kalamata olives, pitted
  • 4 rounds warm pita bread, cut into triangles

Instructions
 

1. Sauté the Garlic and Seasonings

  • Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for 30 seconds until fragrant. Stir in the oregano, dill, cumin, onion powder, salt, and black pepper to bloom the dry spices.

2. Brown the Ground Turkey

  • Add the ground turkey to the skillet with the blooming spices. Break up the turkey meat using a wooden spoon. Cook for 8 to 10 minutes until the meat is fully browned and cooked through.

3. Prepare the Fresh Veggies

  • While the turkey finishes cooking, chop your fresh cucumber, cherry tomatoes, and red onion. Place them into small dishes. Having your crisp toppings ready makes bowl assembly fast and fun for everyone.

4. Build the Grain Base

  • Divide the warm cooked rice or quinoa evenly among four deep serving bowls. Fluff the grains lightly with a fork. This step creates a solid and filling base for your delicious dinner creation.
