Ingredients
  

  • Chicken = 3 1/2 lb, (Washed & cut into around 8 pieces)
  • Buttermilk = 1 qt
  • Flour = 3 cups
  • Paprika =2 tsp
  • Salt = 2 tsp
  • Cayenne pepper = 1 tsp
  • Black pepper (freshly ground) = 1 tsp
  • Peanut oil = 3/4 cup

Instructions
 

  • Place the chicken in an inert pan and add the buttermilk. Cover it and then refrigerate for a minimum of 2 hours, or overnight.
  • In a big plastic bag, combine flour, cayenne pepper, salt, black pepper and paprika. Shake the mix well.
  • Heat three-quarters of peanut oil in the cast-iron skillet on a medium-high heat.
  • Meanwhile, thoroughly coat every single piece of chicken in your seasoned flour. 
  • When the oil becomes very hot but not smoking then add the coated chicken, starting with the largest pieces and skin side down. (For tiny skillets, work in batches.) Lower the heat to medium and fry for about 12-15 minutes, rotating once, until the chicken gets golden brown and crunchy & crispy on each side. Drain the chicken using paper towels.
