Equipment

  • Medium saucepan
  • Whisk
  • Fine mesh strainer
  • Mixing bowl
  • Silicone gummy molds
  • Dropper or spoon

Ingredients

  • 1 cup Dried elderberries
  • 3 cups Water
  • 3 tablespoons Raw honey
  • 2 tablespoons Fresh lemon juice
  • 4 tablespoons Unflavored gelatin powder
  • 1 teaspoon Ground cinnamon
  • 1/2 teaspoon Ground ginger
  • 1/4 teaspoon Ground cloves, optional

Instructions

Simmer Elderberries

  • Add dried elderberries and water to a saucepan. Bring to a boil, then reduce heat and simmer gently for about 15 to 20 minutes until liquid reduces.

Add Spices

  • During the last few minutes of simmering, stir in cinnamon, ginger, and cloves. Mix gently and let the spices infuse into the liquid for added warmth and flavor.

Strain Mixture

  • Remove from heat and cool slightly. Strain mixture through a fine mesh strainer into a bowl, pressing berries to extract as much liquid as possible.

Add Honey and Lemon

  • Let the liquid cool until warm, not hot. Stir in lemon juice and honey, mixing well until fully dissolved while preserving the natural benefits of the honey.

Bloom Gelatin

  • Sprinkle gelatin evenly over the warm liquid. Let it sit briefly, then whisk until smooth. Gently heat if needed, but avoid boiling to maintain proper texture.

Fill Molds

  • Carefully pour mixture into silicone molds using a dropper or spoon. Work quickly to fill each cavity evenly before the mixture begins to set.

Chill Gummies

  • Place molds in refrigerator and chill for at least one hour until fully firm. For best results, leave them overnight to ensure perfect texture and easy removal.

Store and Serve

  • Once set, remove gummies from molds carefully. Store them in an airtight container in the refrigerator and enjoy as a healthy, natural wellness snack anytime.

Notes

  • Do not add honey to hot liquid to keep nutrients intact
  • Use silicone molds for best results
  • Store in fridge for freshness
  • Work quickly when pouring mixture
