Equipment

  • Sharp knife
  • Cutting board
  • Mixing bowl
  • Small bowl for dressing
  • Whisk or fork
  • Serving platter

Ingredients

  • Fennel bulbs – 2 medium, thinly sliced
  • Oranges – 3 large, peeled and sliced into rounds
  • Red onion – ½ small, very thinly sliced
  • Olive oil – 3 tablespoons
  • Fresh lemon juice – 2 tablespoons
  • Honey – 1 teaspoon
  • Salt – ½ teaspoon
  • Black pepper – ¼ teaspoon
  • Fresh parsley – 2 tablespoons, chopped
  • Fennel fronds – small handful, chopped (optional)

Instructions

Prepare the fennel

  • Start by trimming the fennel bulbs. Remove the stalks and keep the fronds for later. Slice the fennel very thin. Use a sharp knife or mandoline for best results.

Slice the oranges

  • Peel the oranges carefully. Remove all white pith for a clean taste. Slice them into round pieces. Try to keep the slices even for a nice look.

Prepare the onion

  • Take a small red onion and slice it very thin. If the taste feels strong, soak slices in cold water for five minutes. This helps make the flavor milder.

Make the dressing

  • In a small bowl, mix olive oil, lemon juice, and honey. Add salt and black pepper. Whisk everything until smooth and slightly thick. Taste and adjust if needed.

Combine the salad

  • In a large bowl, add sliced fennel, oranges, and onion. Pour the dressing over everything. Toss gently so the slices stay whole and beautiful.

Add fresh herbs

  • Sprinkle chopped parsley and fennel fronds on top. These add freshness and color. Toss lightly again so herbs spread evenly throughout the salad.

Serve and enjoy

  • Transfer the salad to a serving plate. Serve immediately for best taste. The flavors are fresh, crisp, and slightly sweet. It pairs well with many main dishes.

Notes

  • Slice fennel very thin for best texture
  • Use a mandoline for even slices
  • Add arugula for extra greens
  • Try blood oranges for a colorful twist
  • Add toasted nuts for crunch
  • Chill before serving for extra freshness
