  • Mixing bowl
  • Wooden spoon
  • Whisk
  • Measuring cups and spoons
  • Knife and cutting board
  • Aluminum foil
  • Oven mitts

Ingredients

  • Lasagna noodles – 12 sheets
  • Mushrooms – 1 pound, sliced
  • Olive oil – 2 tablespoons
  • Butter – 2 tablespoons
  • Garlic – 3 cloves, minced
  • Onion – 1 small, chopped
  • Heavy cream – 1 cup
  • Whole milk – 1 cup
  • Ricotta cheese – 1 ½ cups
  • Mozzarella cheese – 2 cups, shredded
  • Parmesan cheese – ¾ cup, grated
  • Fresh thyme – 1 teaspoon
  • Salt – 1 teaspoon
  • Black pepper – ½ teaspoon
  • Flour – 2 tablespoons

Instructions

Cook Noodles

  • Bring a large pot of salted water to a boil. Add lasagna noodles and cook until just tender. Drain them and lay flat on a clean surface to prevent sticking.

Cook Mushrooms

  • Heat olive oil and butter in a large skillet over medium heat. Add sliced mushrooms and cook slowly. Stir often until they release moisture and turn golden brown and soft.

Add Onion and Garlic

  • Add chopped onion and cook until soft and light golden. Stir in minced garlic and cook for one minute. This step adds a deep flavor to your mushroom mixture.

Make Sauce

  • In a saucepan, melt butter and add flour. Cook for one minute while stirring. Slowly add milk and cream. Whisk well until the sauce thickens and becomes smooth.

Season Sauce

  • Add salt, black pepper, and fresh thyme to the sauce. Stir gently and taste. Adjust seasoning if needed. The sauce should taste rich and balanced.

Prepare Ricotta

  • In a bowl, mix ricotta cheese with a little salt and pepper. This layer makes the lasagna soft and creamy. Keep it ready for layering.

Layer Lasagna

  • Preheat oven to 375°F. Spread a little sauce on the baking dish. Add noodles, then mushroom mixture, ricotta, and sauce. Repeat layers until everything is used.

Add Cheese

  • Top the final layer with mozzarella and Parmesan cheese. This will melt and create a golden crust. Make sure the top is evenly covered.

Bake

  • Cover the dish with foil and bake for 30 minutes. Remove foil and bake for another 15 minutes until the top is golden and bubbly.

Rest and Serve

  • Take the lasagna out and let it rest for 10 minutes. This helps it set properly. Slice and serve warm for the best texture and flavor.

Notes

  • Use mixed mushrooms for deeper flavor
  • Add spinach for extra nutrition
  • Let lasagna rest before slicing
  • Serve with salad or garlic bread
  • Store leftovers in fridge up to 3 days
  • Freeze for up to 2 months
