Ingredients
  

  • Dried black beans – 1 pound, rinsed and sorted
  • Water – 6 cups
  • Onion – 1 small, chopped
  • Garlic – 3 cloves, minced
  • Salt – 1 teaspoon, add to taste
  • Bay leaf – 1, optional
  • Ground cumin – ½ teaspoon, optional
  • Smoked paprika – ½ teaspoon, optional

Instructions
 

Rinse the beans

  • Place the dried black beans in a fine mesh strainer and rinse them under cold water. Remove any small stones or broken beans. Clean beans cook more evenly and give better texture.

Add ingredients

  • Add the rinsed beans to the Instant Pot. Pour in water and add chopped onion, minced garlic, and optional spices. Stir gently so everything is evenly combined before cooking.

Pressure cook

  • Close the lid and set the valve to sealing. Select pressure cook or manual mode and set the timer to thirty minutes on high pressure. The pot will build pressure first.

Natural release

  • When cooking ends, let the pressure release naturally for about fifteen minutes. This helps the beans finish cooking gently. Carefully release any remaining pressure before opening.

Season and adjust

  • Open the lid and stir the beans. Add salt if you did not add it earlier. Remove the bay leaf. Use sauté mode briefly if you want thicker beans.

Serve or store

  • Serve the black beans warm or allow them to cool before storing. They should be tender, creamy, and ready to use in many meals throughout the week.
