Ingredients
  

  • Whole kernel corn – 1 can (15 ounces), drained thoroughly
  • Cream-style corn – 1 can (14.75 ounces)
  • Jalapeno peppers – 2 large, seeded and finely minced
  • All-purpose flour – 1 cup, divided into two halves
  • Yellow cornmeal – 1/2 cup
  • Baking powder – 1 teaspoon
  • Garlic powder – 1/2 teaspoon
  • Salt – 1/2 teaspoon
  • Black pepper – 1/4 teaspoon
  • Large eggs – 2, beaten well
  • Whole milk – 1/2 cup
  • Panko breadcrumbs – 1 cup, for ultimate crunch
  • Vegetable oil, for deep frying

Instructions
 

Mix the Corn Base

  • Combine the drained whole corn, cream-style corn, and minced jalapenos in a medium bowl. Stir the mixture gently until the peppers are evenly distributed throughout the corn base.

Add Dry Ingredients

  • Stir in a half cup of flour, cornmeal, baking powder, garlic powder, salt, and black pepper. Mix thoroughly until a thick, uniform batter forms and no dry flour spots remain.

Freeze the Batter

  • Drop the thick batter by rounded tablespoons onto a baking sheet lined with parchment paper. Place the sheet in the freezer for about 30 minutes until the portions are firm.

Prepare Coating Stations

  • Set up two separate shallow bowls on your counter for the crispy coating process. Whisk eggs and milk in the first bowl, then place panko breadcrumbs in the second.

Coat the Nuggets

  • Roll each frozen corn nugget in the remaining half cup of dry flour first. Next, dip it into the egg mixture and roll it generously in the panko breadcrumbs.

Heat the Oil

  • Pour vegetable oil into your heavy pot until it reaches a depth of three inches. Heat the oil over medium heat until a thermometer registers exactly 350 degrees Fahrenheit.
