Equipment

  • Muffin pan
  • Muffin liners
  • Large mixing bowl
  • Medium mixing bowl
  • Whisk
  • Spatula
  • Measuring cups and spoons
  • Cooling rack
  • Ice cream scoop or spoon

Ingredients

  • Almond flour – 2 cups
  • Pumpkin puree – ½ cup
  • Large eggs – 3
  • Melted butter – ⅓ cup
  • Keto sweetener – ⅓ cup
  • Vanilla extract – 1 teaspoon
  • Baking powder – 1 teaspoon
  • Baking soda – ½ teaspoon
  • Cinnamon – 1 teaspoon
  • Pumpkin pie spice – ½ teaspoon
  • Salt – ¼ teaspoon
  • Unsweetened almond milk – ¼ cup
  • Chopped pecans – 2 tablespoons, optional

Instructions

Prepare the Muffin Pan

  • Preheat your oven to 350 degrees Fahrenheit. Line a muffin pan with paper liners or lightly grease each cup. This helps the muffins release easily after baking and keeps cleanup simple.

Mix the Dry Ingredients

  • In a large mixing bowl, combine almond flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt. Whisk everything well so the spices spread evenly through the muffin batter.

Mix the Wet Ingredients

  • In another bowl, whisk pumpkin puree, eggs, melted butter, keto sweetener, vanilla extract, and almond milk. Stir until the mixture becomes smooth, creamy, and fully combined without any lumps remaining.

Combine Wet and Dry Mixtures

  • Slowly pour the wet mixture into the dry ingredients. Stir gently using a spatula until a thick batter forms. Avoid overmixing because it can make the muffins too dense after baking.

Add Optional Pecans

  • Fold chopped pecans into the batter if using them. They add a crunchy texture and nutty flavor that pairs perfectly with the warm pumpkin spices inside these soft keto muffins.

Fill the Muffin Cups

  • Use a spoon or ice cream scoop to divide the batter evenly into the muffin cups. Fill each cup almost to the top because almond flour muffins do not rise heavily.

Bake the Muffins

  • Place the muffin pan into the oven and bake for 20 to 22 minutes. The tops should look golden and firm. A toothpick inserted into the center should come out clean.

Cool and Serve

  • Remove the muffins from the oven and let them cool in the pan for five minutes. Transfer them onto a cooling rack before serving warm with coffee, tea, or butter.

Notes

  • Use room temperature eggs for smoother batter
  • Do not overmix the batter after combining ingredients
  • Add sugar-free chocolate chips for extra sweetness
  • Store muffins in an airtight container for freshness
  • Freeze muffins individually for up to 2 months
  • Warm in the oven for better texture before serving
