Equipment

  • High-speed food processor
  • Sharp zester or microplane
  • Citrus juicer
  • Small cookie dough scoop
  • Large baking sheet
  • Parchment paper
  • Airtight storage container

Ingredients

  • Raw cashews – 1 cup, un-roasted and unsalted work best
  • Rolled oats – 1 cup, old-fashioned oats provide great texture
  • Medjool dates – 1 cup, pitted and packed tightly
  • Large lemon – 1, you will need both the zest and juice
  • Pure maple syrup – 1 tablespoon, or raw honey
  • Poppy seeds – 1 tablespoon
  • Pure vanilla extract – 1 teaspoon
  • Fine sea salt – 1 pinch

Instructions

Process the Dry Ingredients

  • Put your raw cashews and rolled oats into the bowl of your high-speed food processor. Pulse them quickly until they form a fine, crumbly flour texture. Avoid over-processing so the mixture does not turn into nut butter.

Prepare the Soft Dates

  • Ensure your Medjool dates are completely pitted before adding them to the food processor. If your dates feel dry, soak them in warm water for five minutes. Drain the water thoroughly before using them.

Zest and Juice Lemon

  • Wash your fresh lemon thoroughly under warm water before you begin zesting. Use a microplane to gather one tablespoon of bright yellow zest. Cut the lemon and squeeze two tablespoons of fresh juice.

Blend the Snack Dough

  • Add the pitted dates, lemon zest, fresh juice, maple syrup, vanilla, and salt to the processor. Blend on high speed until a thick, sticky dough forms. The dough should clump together into a ball.

Fold in Poppy Seeds

  • Remove the blade from the food processor bowl very carefully. Pour the poppy seeds directly into the sticky lemon dough. Use a silicone spatula to fold the seeds in until they are evenly distributed.

Scoop the Energy Bites

  • Line your large baking sheet with a piece of clean parchment paper. Use a small cookie dough scoop to grab equal portions of the dough. Drop the portions onto your prepared baking sheet.

Roll and Chill

  • Roll each portion between your clean palms to shape them into smooth, round balls. Place the baking sheet into the refrigerator for thirty minutes. This chilling time helps the bites firm up nicely.

Notes

  • Soak your dry dates: Hard dates will not blend smoothly into the mixture. Soaking them in hot water for a few minutes makes the dough perfectly soft and pliable.
  • Add some coconut: Roll the finished energy bites in unsweetened shredded coconut right after shaping them. This adds a wonderful tropical flavor and a beautiful white coating.
  • Boost the protein powder: Add one scoop of vanilla plant-based protein powder to the food processor. You may need to add an extra teaspoon of lemon juice to keep the dough moist.
  • Try different raw nuts: You can easily swap half of the raw cashews for raw almonds or walnuts. This simple swap changes the nutritional profile and adds a deeper nutty flavor.
  • Adjust the tartness level: If you prefer a very sour snack, add an extra teaspoon of lemon zest. You can skip the maple syrup completely to reduce the overall sweetness.
  • Keep them refrigerated: Always store your finished energy bites in an airtight container inside your refrigerator. They will stay fresh, chewy, and delicious for up to two weeks.
  • Freeze for long storage: You can place the container directly into the freezer for longer storage. They will keep perfectly fine in the freezer for up to three months.
  • No thawing required: You can eat these bites directly out of the freezer if you like a firm snack. They stay slightly soft even when frozen due to the dates.
  • Use parchment paper layers: Place a small sheet of parchment paper between the layers of bites. This simple trick prevents them from sticking together in the container.
  • Keep them cool on trips: If you take them on a hot summer trip, use an insulated lunch box. The bites can get slightly sticky if left in direct sunlight for too long.
