Ingredients
  

  • 2 cups Fresh peaches, peeled and diced
  • 1/4 cup Granulated sugar
  • 1 tsp Ground cinnamon
  • 1/4 tsp Nutmeg
  • 1 tsp Lemon juice
  • 1 tsp Cornstarch
  • 8 Egg roll wrappers
  • 1 Egg, beaten, for sealing
  • Vegetable oil, for frying
  • Powdered sugar, for dusting, optional

Instructions
 

Prepare peach filling

  • In a small saucepan, combine diced peaches, sugar, cinnamon, nutmeg, and lemon juice. Cook over medium heat until peaches release their juices, stirring often.

Thicken filling

  • Mix cornstarch with a tablespoon of water to create a slurry. Add to peach mixture and stir until it thickens. Remove from heat and cool slightly.

Prepare wrappers

  • Lay one egg roll wrapper on a clean surface with a corner pointing toward you. Keep remaining wrappers covered with a damp cloth to prevent drying.

Fill wrappers

  • Place about 2 tablespoons of the peach filling in the center of the wrapper. Be careful not to overfill, leaving edges free for sealing.

Roll egg rolls

  • Fold the bottom corner over the filling, then fold in the sides and roll tightly toward the top corner. Brush top corner with beaten egg to seal.

Heat oil

  • Pour vegetable oil into a skillet or deep fryer to 1/2 inch depth. Heat to 350°F (175°C). Use a thermometer if possible for accuracy.

Fry egg rolls

  • Carefully place 2–3 egg rolls in hot oil. Fry 2–3 minutes per side until golden brown. Turn gently using tongs or a slotted spoon.

Drain and cool

  • Remove fried egg rolls and place on paper towels to drain excess oil. Let them cool slightly before serving.

Serve and garnish

  • Optionally, sprinkle with powdered sugar. Serve warm for the best flavor and texture, perfect with vanilla ice cream or whipped cream.
