- 3 Large eggs
- 3 Rice-paper sheets
- 1/4 cup Bell peppers, diced, (any color)
- 1/4 cup Onions, diced
- 1/4 cup Shredded cheese, (optional)
- Salt and pepper, to taste
- 2 tablespoons Cooking oil
Add salt, pepper, and eggs to a bowl to beat. On the other hand, cut the bell peppers and onions into small pieces.
To make each rice paper sheet flexible, dip it into warm water for five to ten seconds.Be gentle to avoid tearing.
On a clean surface, pour a generous amount of whisked eggs, chopped bell peppers (cheese if using), and onions in the center of a soaked rice paper sheet.
Create a pocket by folding the sides of the rice paper and carefully securing the ingredients inside.
On medium flame, heat oil in a pan. Seam side downward, lay the rice-paper omelet in the pan. Cook until the rice paper is golden and the eggs are cooked through, approximately 2 to 3 minutes per side.
Once cooked, dish out the omelet. Cut it into slices and serve warm.
