Equipment

  • Large sheet pan
  • Large mixing bowl
  • Small mixing bowl
  • Measuring cups
  • Measuring spoons
  • Sharp knife
  • Cutting board
  • Citrus juicer
  • Tongs
  • Serving platter

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 limes, juiced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small red onion, sliced
  • 1 tablespoon olive oil
  • 12 large butter lettuce leaves
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • lime wedges, for serving
  • 1/2 cup plain Greek yogurt

Instructions

Preheat the Oven

  • Preheat your oven to 425°F (220°C). Line a large sheet pan with parchment paper if desired. This helps with cleanup and prevents the shrimp and vegetables from sticking.

Season the Shrimp

  • Place the shrimp in a large mixing bowl. Add olive oil, chili powder, garlic powder, smoked paprika, salt, pepper, and fresh lime juice. Toss everything together until the shrimp is evenly coated.

Prepare the Vegetables

  • Add the sliced bell peppers and red onion to another bowl. Drizzle with olive oil and toss well. The vegetables will roast beautifully and add color and sweetness to the wraps.

Arrange Everything on the Sheet Pan

  • Spread the vegetables across one side of the sheet pan. Arrange the shrimp on the other side in a single layer. This helps everything cook evenly and develop great flavor.

Roast Until Perfect

  • Place the sheet pan in the oven and roast for 10 to 12 minutes. The shrimp should turn pink and opaque while the vegetables become tender with lightly browned edges.

Prepare the Toppings

  • While everything cooks, dice the avocado and chop the cilantro. Arrange the lettuce leaves on a serving platter. Place the toppings nearby so everyone can easily build their wraps.

Assemble the Lettuce Wraps

  • Fill each lettuce leaf with roasted shrimp and vegetables. Add diced avocado, cilantro, and a small spoonful of Greek yogurt. Squeeze fresh lime juice over the top.

Serve and Enjoy

  • Serve the wraps immediately while the shrimp is warm. Let everyone customize their own wraps with extra toppings and lime wedges for even more fresh flavor.

Notes

  • Pat the shrimp dry before seasoning.
  • Do not overcook the shrimp.
  • Use romaine leaves if butter lettuce is unavailable.
  • Add sliced jalapeños for extra heat.
  • Use chicken instead of shrimp if preferred.
  • Add shredded cabbage for extra crunch.
  • Try a drizzle of spicy sauce.
  • Add mango chunks for a sweet contrast.
  • Use fresh lime juice for the best flavor.
  • Store shrimp and vegetables separately from lettuce.
  • Refrigerate leftovers for up to 3 days.
  • Reheat shrimp gently in a skillet.
