Equipment

  • One large skillet or frying pan
  • A sharp chef's knife
  • A sturdy cutting board
  • A medium mixing bowl
  • A lime juicer
  • Measuring spoons and cups
  • A large spoon for assembling the bowls

Ingredients

  • 1 pound of large shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 tablespoon of olive oil
  • 1 teaspoon of chili powder
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of ground cumin
  • 1/4 teaspoon of salt
  • 1 cup of cooked white or brown rice
  • 1 cup of cherry tomatoes, halved
  • 1/4 cup of fresh cilantro, chopped
  • 1 whole lime, juiced

Instructions

Season the Shrimp

  • Place your cleaned shrimp into a medium mixing bowl. Add the chili powder, garlic powder, cumin, and salt to the bowl. Toss the shrimp gently until every piece is evenly coated with the spices.

Cook the Shrimp

  • Heat the olive oil in your large skillet over medium-high heat. Add the seasoned shrimp to the hot pan in a single layer. Cook them for about two to three minutes on each side until they turn pink.

Prepare the Base

  • Grab two serving bowls to start assembling your meal. Divide your cooked white or brown rice equally between the two bowls. This rice will act as a warm and hearty base for your toppings.

Add the Fresh Toppings

  • Dice your ripe avocados and cut the cherry tomatoes in half on a cutting board. Arrange the avocado pieces and tomato halves neatly on top of the rice base in each bowl.

Assemble and Serve

  • Divide the hot, cooked shrimp between the two bowls. Top the bowls with freshly chopped cilantro and drizzle the fresh lime juice over everything. Serve immediately while the shrimp is still warm.

Notes

  • Choose the right avocados: Use avocados that yield slightly to gentle pressure so they are perfectly creamy.
  • Switch up the grain: Swap the rice for quinoa, cauliflower rice, or a bed of leafy salad greens.
  • Add some heat: Mix in some diced jalapenos or a splash of hot sauce if you love spicy food.
  • Do not overcook the shrimp: Keep a close eye on the shrimp because they cook very quickly and can become rubbery.
  • Include extra veggies: Roasted corn, black beans, or sliced bell peppers make fantastic additions to these bowls.
  • Store components separately: Keep the cooked shrimp and the fresh avocado in separate airtight containers in the fridge.
  • Keep it fresh: Store the leftovers for up to two days for the best taste and quality.
  • Prevent browning: Drizzle extra lime juice over any leftover avocado pieces to stop them from turning brown.
  • Reheat gently: Warm the shrimp in a skillet over low heat for two minutes so it stays juicy.
  • Enjoy cold items cold: Do not heat the avocado or tomatoes; add them fresh after warming the rice and shrimp.
