Equipment

  • 4 to 6-quart slow cooker
  • Vegetable peeler
  • Sharp knife
  • Cutting board
  • Measuring cups and spoons
  • Small mixing bowl
  • Silicone spatula or wooden spoon
  • Serving spoon or tongs

Ingredients

  • 2 pounds carrots, peeled and cut into 1-inch diagonal slices
  • 3 tablespoons unsalted butter, cut into small cubes
  • 3 tablespoons honey
  • 3 tablespoons brown sugar, packed
  • 1 tablespoon pure maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon fresh orange juice, or orange zest for stronger flavor
  • Fresh parsley or thyme, for garnish (optional)

Instructions

Prepare the Carrots

  • Wash and peel all your carrots first. Then cut them into diagonal slices about one inch thick. Try to keep the pieces similar in size so they cook evenly and absorb the glaze beautifully.

Mix the Glaze

  • In a small mixing bowl, combine the honey, brown sugar, maple syrup, cinnamon, ginger, salt, pepper, vanilla extract, and orange juice. Stir until the sugar dissolves and the mixture becomes smooth and fragrant.

Add Carrots to Slow Cooker

  • Place all the sliced carrots into the bottom of your slow cooker. Spread them into an even layer so the glaze can coat each piece evenly during the cooking process.

Add the Glaze

  • Pour the prepared glaze evenly over the carrots. Scatter the cubes of butter across the top. As the carrots cook, the butter will melt and create a rich, silky coating.

Stir to Coat

  • Give everything a gentle stir to begin coating the carrots with the glaze and butter mixture. Place the lid on the slow cooker and allow the heat to do the rest of the work.

Cook the Carrots

  • Cook the carrots on High for 3 hours or on Low for 5 to 6 hours. They are ready when fork-tender yet still holding their shape without becoming mushy.

Check for Doneness

  • About 30 minutes before the end of cooking, gently stir the carrots to redistribute the glaze. Taste for doneness and continue cooking if needed until perfectly tender and flavorful.

Reduce the Glaze (Optional)

  • For a thicker glaze, transfer the cooked carrots to a serving dish. Simmer the remaining liquid in a saucepan for several minutes until glossy and slightly reduced, then pour it back over the carrots.

Garnish and Serve

  • Garnish the glazed carrots with freshly chopped parsley or thyme for a pop of color and freshness. Serve warm and enjoy this comforting, crowd-pleasing side dish with your favorite meals.

Notes

  • Use baby carrots to save preparation time; they may require slightly longer cooking.
  • Add a pinch of cayenne pepper for a subtle sweet-heat contrast.
  • Swap maple syrup for balsamic glaze for deeper flavor complexity.
  • Reduce the glaze on the stovetop for a thicker, glossy finish.
  • Store leftovers in the refrigerator for up to 4 days or freeze for up to 2 months.
  • Reheat gently to prevent the carrots from becoming mushy.
