Ingredients
  

  • Cooked chicken breast – 2 cups, shredded or diced into small cubes
  • Flour tortillas – 4 large, burrito size works best
  • Canned black beans – 1 cup, rinsed and thoroughly drained
  • Sweet corn kernels – 1 cup, canned, frozen, or fresh
  • Romaine lettuce – 1 cup, washed and finely chopped
  • Roma tomato – 1 large, diced small
  • Cheddar cheese – ½ cup, finely shredded
  • Sour cream – ¼ cup, or plain Greek yogurt
  • Mayonnaise – 2 tablespoons
  • Fresh lime juice – 1 tablespoon
  • Chili powder – 1 teaspoon
  • Ground cumin – ½ teaspoon
  • Garlic powder – ½ teaspoon
  • Salt – ¼ teaspoon

Instructions
 

Mix the Creamy Dressing

  • In a small bowl, combine the sour cream, mayonnaise, fresh lime juice, chili powder, ground cumin, garlic powder, and salt. Use a whisk or fork to blend the ingredients together until the sauce is completely smooth and pale orange.

Combine the Filling Ingredients

  • Place your shredded cooked chicken, drained black beans, sweet corn, and diced tomatoes into a large mixing bowl. Pour the prepared chili-lime dressing directly over the top of the ingredients. Stir gently until everything is evenly coated with sauce.

Warm the Flour Tortillas

  • Place a large dry skillet over medium heat for one minute. Warm each flour tortilla for about fifteen seconds on each side until they become soft, pliable, and easy to roll up without cracking.

Layer the Fresh Lettuce

  • Lay one warmed tortilla flat on a clean cutting board or plate. Place a generous handful of the chopped romaine lettuce right in the center of the tortilla, leaving a clean border around the edges.

Add the Flavorful Filling

  • Spoon a quarter of the chicken and bean mixture directly on top of the lettuce layer. Sprinkle two tablespoons of the shredded cheddar cheese evenly over the filling to add a rich, savory finish.

Roll and Serve

  • Fold the left and right sides of the tortilla tightly over the filling. Start from the bottom edge and roll the tortilla tightly upward into a secure wrap. Slice diagonally and serve immediately to your guests.
