Remove the pan from heat and add the peanut butter, tamari (or soy sauce), rice vinegar, sesame oil, sriracha, maple syrup (or honey), red pepper flakes, and ⅓ cup of hot water.
Whisk the ingredients together until smooth, adding more hot water as needed to achieve your desired sauce consistency.
Taste the sauce and adjust seasoning, add more soy sauce for saltiness, sriracha for heat, or sweetener to balance flavors.
Toss the cooked noodles with half of the sauce to start, mixing thoroughly. Add more sauce gradually until the noodles are coated to your preference.
Serve immediately, topped with crushed peanuts, chopped scallions, and extra red pepper flakes if desired.
