Ingredients
  

  • Ramen noodles – 2 packs, discard seasoning packets
  • Vegetable oil – 1 tablespoon
  • Garlic – 3 cloves, minced
  • Fresh ginger – 1 teaspoon, grated
  • Soy sauce – 2 tablespoons
  • Chili paste or chili garlic sauce – 1 to 2 tablespoons
  • Sesame oil – 1 teaspoon
  • Brown sugar or honey – 1 teaspoon
  • Vegetable broth or water – 3 cups
  • Mushrooms – 1 cup, sliced
  • Spinach or bok choy – 1 cup
  • Green onions – 2, sliced
  • Soft boiled eggs – 2, optional
  • Chili oil, for topping

Instructions
 

Prepare the noodles

  • Bring a pot of water to a gentle boil and add the ramen noodles. Cook for about two minutes, stirring gently so they do not stick. Drain slightly early and set aside to finish later in the broth.

Heat the oil and aromatics

  • Place a frying pan or wok over medium heat and add vegetable oil. Once warm, add minced garlic and grated ginger. Stir slowly for about thirty seconds until fragrant, making sure they do not burn.

Build the spicy sauce

  • Add soy sauce, chili paste, sesame oil, and brown sugar to the pan. Stir well until everything blends into a smooth, spicy sauce. Taste carefully and adjust the heat level if needed.

Add broth and vegetables

  • Pour the vegetable broth into the pan and stir to combine with the sauce. Add sliced mushrooms and let them simmer for a few minutes. Add spinach or bok choy and cook until just wilted.

Combine noodles and simmer

  • Add the partially cooked ramen noodles into the pan. Gently toss them in the broth so they absorb the spicy flavor. Let everything simmer together for two to three minutes until tender.

Serve and garnish

  • Turn off the heat and divide the noodles into serving bowls. Top with sliced green onions, soft boiled eggs if using, and a drizzle of chili oil. Serve hot for best comfort and flavor.
