Equipment

  • Large pot
  • Cutting board
  • Sharp knife
  • Wooden spoon
  • Measuring cups
  • Measuring spoons

Ingredients

  • Sweet potatoes – 2 large, peeled and cubed
  • Olive oil – 2 tablespoons
  • Onion – 1 medium, chopped
  • Garlic – 3 cloves, minced
  • Fresh ginger – 1 tablespoon, grated
  • Curry powder – 2 tablespoons
  • Coconut milk – 1 can (14 oz), full fat
  • Vegetable broth – 1 cup
  • Chickpeas – 1 can (15 oz), drained and rinsed
  • Salt – 1 teaspoon, or to taste
  • Black pepper – ½ teaspoon
  • Lime juice – 1 tablespoon, fresh
  • Fresh cilantro – 2 tablespoons, chopped, for garnish

Instructions

Cook the onion

  • Heat olive oil in a large pot over medium heat. Add chopped onion and cook slowly, stirring often, until soft and lightly golden. This builds a gentle flavor base for the curry.

Add garlic and ginger

  • Add minced garlic and grated ginger to the pot. Stir constantly for about one minute until fragrant. Be careful not to brown them, as this keeps the flavor warm and balanced.

Toast the spices

  • Sprinkle in the curry powder and stir well. Let the spices toast gently for thirty seconds. This step helps release aroma and deepens the overall flavor of the Sweet Potato Curry Recipe.

Add liquids and potatoes

  • Add cubed sweet potatoes, coconut milk, and vegetable broth. Stir to combine everything evenly. Bring the mixture to a gentle simmer so the sweet potatoes start cooking slowly.

Simmer the curry

  • Cover the pot and cook for about twenty minutes. Stir occasionally to prevent sticking. The sweet potatoes should become tender and creamy when pierced with a fork.

Add chickpeas and seasoning

  • Stir in the chickpeas, salt, and black pepper. Cook uncovered for five more minutes. This thickens the sauce slightly and allows all flavors to blend together nicely.

Finish and serve

  • Turn off the heat and add fresh lime juice. Taste and adjust seasoning if needed. Garnish with chopped cilantro and serve warm with rice or flatbread.

Notes

  • Add spinach at the end for extra greens
  • Use red curry paste for a spicier version
  • Serve with basmati rice or naan
  • Leftovers taste even better the next day
