Equipment

  • Large non-stick skillet
  • High-speed blender or food processor
  • Measuring spoons and cups
  • Sharp chef's knife and cutting board
  • Fish spatula

Ingredients

  • Fresh tilapia fillets – 4 (about 6 ounces each)
  • Roasted red peppers – 1 jar (12 ounces), drained well
  • Fresh garlic – 3 cloves, roughly chopped
  • Olive oil – 2 tablespoons, divided
  • Heavy cream or full-fat coconut milk – 1/4 cup
  • Smoked paprika – 1/2 teaspoon
  • Dried oregano – 1/2 teaspoon
  • Sea salt – 1/2 teaspoon, plus more for seasoning
  • Freshly cracked black pepper – 1/4 teaspoon
  • Fresh lemon juice – 1 tablespoon
  • Fresh parsley – 1 tablespoon, chopped for ganish

Instructions

Dry the Fish

  • Pat the tilapia fillets thoroughly with clean paper towels. Removing excess moisture helps the fish sear perfectly instead of steaming in the hot pan.

Season the Fillets

  • Sprinkle both sides of the fish with salt, black pepper, and smoked paprika. Rub the spices gently into the flesh so every bite tastes amazing.

Blend the Sauce

  • Place the drained roasted red peppers, garlic, oregano, and salt into your blender. Blend on high speed until the mixture is completely smooth and creamy.

Cook the Fish

  • Heat one tablespoon of olive oil in your skillet over medium-high heat. Add the fillets carefully and cook for three to four minutes per side until flaky.

Remove and Rest

  • Transfer the cooked tilapia gently onto a clean plate. Cover the plate loosely with foil to keep the fish warm while you make the sauce.

Simmer the Sauce

  • Pour the blended pepper mixture into the same skillet over medium heat. Stir well to pick up all the tasty brown bits left by the fish.

Add the Cream

  • Stir the heavy cream and fresh lemon juice into the warm pepper sauce. Let it simmer gently for two minutes until it thickens up beautifully.

Combine and Serve

  • Place the warm tilapia fillets back into the skillet with the sauce. Spoon the rich sauce over the fish, top with parsley, and serve immediately.

Notes

  • Swap the fish: You can easily use cod, mahi-mahi, or halibut if you cannot find quality tilapia.
  • Make it dairy-free: Use canned coconut cream instead of heavy cream for a rich, lactose-free sauce.
  • Add some heat: Mix in a pinch of red pepper flakes if you enjoy a spicy kick.
  • Storage: Store leftovers in an airtight container in the fridge for up to two days.
  • Reheating: Reheat the leftovers gently in a skillet over low heat on the stovetop. Avoid using the microwave because it can make the delicate fish rubbery and tough.
