This hearty vegan pasta recipe couldn’t be easier to make, yet it captures all the comforting flavors of a classic pot pie. You’ll start by boiling your pasta until just shy of al dente, then sauté onion, carrots, garlic, peas, and corn in vegan butter for a rich base. Next, chickpeas and a blend of vegetable broth, cashew cream, and seasoning come together to form a silky, savory sauce.

- 10 ounces uncooked pasta, gluten-free if needed
- 3 tablespoons vegan butter, or substitute olive oil
- 1 small yellow onion, diced
- 2 carrots, peeled and finely diced
- 1 tablespoon minced garlic
- 1 cup peas, frozen is fine
- 1 cup corn, fresh or frozen
- 1 can chickpeas, drained and rinsed
- 1½ cups vegetable broth
- ½ cup cashew cream, or dairy-free cream alternative
- 2 tablespoons nutritional yeast
- 2 tablespoons gluten-free all-purpose flour, or regular flour
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 2¼ teaspoons dried thyme
Boil salted water in a large pot. Cook the pasta for 1 to 2 minutes less than package directions. Drain and set aside.
Melt the vegan butter over medium heat in another large pot. Saute the diced onion for about 3 minutes until softened. Add the carrots and cook for another 5 minutes.
Stir in the minced garlic, peas, and corn. Cook for 1 to 2 minutes until fragrant and heated through.
Add the chickpeas, vegetable broth, cashew cream, nutritional yeast, flour, salt, pepper, and thyme. Whisk everything together thoroughly until the flour dissolves and no lumps remain.
Bring the mixture to a low boil, then reduce the heat and let it simmer gently for about 5 minutes. Once it begins to thicken, stir occasionally.
Add the cooked pasta to the sauce and continue simmering for another 5 minutes. It allows the pasta to finish cooking and soak up the creamy sauce.
Taste the pasta and adjust the seasoning as necessary. Add more pepper, salt, or thyme to taste.
Spoon into bowls and garnish with fresh parsley or red pepper flakes if you’d like a bit of heat.
