Ingredients
  

  • Uncooked elbow macaroni = 1 lb
  • Butter = 1/2 cup
  • Cheddar cheese = 6 ounces
  • Diced green bell pepper = 1/2 lg
  • Eggs = 4
  • Diced white onion = 1/2 lg
  • Salt = 2 pinch
  • Paprika = 2 tsp
  • Black pepper = 2 pinch
  • Diced habanero or goat pepper = 1
  • Evaporated milk = 12 oz

Instructions
 

  • Add two pinches of salt to a big saucepan of water. Heat water to a boil, then add your uncooked macaroni.  Boil until tender.
  • Strain the macaroni and return to the pot. Add the butter and toss in the macaroni till it melts.
  • Gradually stir in the majority of the cheese equally. Set aside 8 ounces or 1/2 of a 16-ounce package for subsequent topping.
  • Combine paprika, onion, bell pepper, 1/2 coarsely sliced goat or habanero pepper, and black pepper. Stir vigorously until the cheese has melted and mixed.
  • Beat the eggs softly and stir them into the mixture.
  • Gradually add the evaporated milk, approximately half a cup each time.
  • Stir thoroughly and evenly distribute the mixture using a large greased baking pan measuring 13 x 9.
  • Top with the remaining cheese & cover loosely using foil.
  • Bake it at 375°F for about 1 hour and 10 minutes, till the top is brown.
  • Let the macaroni cool down for 45 to 50 minutes till it reaches room temperature before serving.
