Costa Vida Queso Recipe

Costa Vida Queso is a unique dip that is not just a dip. Its cheesy texture makes it perfect for use as a dip, a filling or a base for another sauce. Well, I don’t have to think much about its usage as whenever I feel like the dinner table is not appealing enough, I put a bowl of Costa Vida Queso, and believe me, it’s enough to draw everyone out of their rooms.

Ingredients
  

  • 2 tbsp Unsalted butter
  • 2 tbsp All-purpose flour
  • 1 cup Whole milk
  • 8 oz White American cheese (cubed)
  • 4 oz Monterey Jack cheese (shredded)
  • ¼ cup Green chiles, diced (can be canned or fresh)
  • ½ tsp Ground cumin
  • ¼ tsp Garlic powder
  • ¼ tsp Onion powder
  • Salt, to taste
  • Chopped cilantro, for garnishing
  • Diced tomatoes, for garnishing
  • Diced jalapeños, for garnishing

Instructions
 

  • The first step is to melt the butter. For this purpose, take a medium-sized saucepan  and add butter to it. Then on a medium flame, melt the butter and make sure it only gets hot and does not brown.
  • Then add the all-purpose flour in the butter. Keep whisking continuously while adding the flour to make the roux without any lumps. Further whisk for 1 minute. 
  • Now add milk slowly to the roux, again whisking continuously to avoid lumps. Then cook for 3-5 minutes to thicken the roux. Keep stirring from time to time.
  • Now lower the flame, bring it to medium-low and add cubed white American cheese and shredded Monterey Jack cheese. Stir to melt and mix the cheese.
  • Now it’s the time to spice things up. Add diced green chiles, ground cumin, garlic powder, and onion powder to the sauce. Mix well until all the seasonings are incorporated well. Taste and adjust the seasonings if needed.
  • Costa Vida Queso  is ready. Garnish it with chopped cilantro, diced tomatoes, and diced jalapeños and serve with your favorite recipes. Bon Appetit!
