- Chicken breasts = 2 large
- Marsala wine = ¾ cup
- Butter = 3 tbsp
- Heavy cream = ½ cup
- Garlic powder = ¼ tsp
- Minced garlic = 1 large clove
- Olive oil = 1 tbsp
- Flour = for dredging
- Salt = to taste
- Pepper = to taste
- Cremini mushrooms = 7 oz
- Chopped parsley = for garnishing
Lengthwise slice the chicken breasts in half. Let go of the excess fat if it’s present. Then season the breast pieces with garlic powder, salt, and black pepper. Sprinkle flour on each piece of the breast.
Take a skillet and add 1 tbsp of butter and olive oil to it. Melt the butter and heat them both at a medium-high temperature. When heated enough, add the floured chicken pieces to the pan and sear them for 4-5 minutes. Flip when one side is done. Let the chicken piece get golden brown. When done, take out the chicken and place aside.
Then add the remaining 2 tbsp of butter in the same skillet. Add the cremini mushrooms and cook them in butter for 3-5 minutes, or until the mushrooms are browned. Make sure to keep stirring continuously.
Add the minced garlic and marsala wine to the skillet. Stir them and boil the contents for 3 minutes.
Put the chicken back in the skillet. Then add the heavy cream to the skillet. Keep cooking for 4-5 minutes. Let the sauce thicken and cook the chicken completely. Taste the sauce and if needed, adjust the seasonings.
