Ingredients

For Shrimp:

  • 1 lb Peeled and deveined shrimp
  • ½ cup Chicken broth
  • 6 slices Bacon
  • 3 cloves Garlic (minced)
  • ½ Bell pepper (minced)
  • ½ White onion (minced)
  • 2 tbsp Cajun seasoning
  • 1 tsp Smoked paprika
  • Salt, to taste
  • Black pepper, to taste
  • Green onion (Chopped)
  • Parsley (Chopped)

For Grit:

  • 1 cup Quick grits
  • 3 cups Milk
  • 2 cups Water
  • 3 tbsp Butter
  • ¾ cup Shredded cheddar cheese
  • Salt, to taste
  • Black pepper, to taste

Instructions

  • First, prepare the grits. Take a medium sized pot and add water and milk in it. On medium flame, bring them to a simmer.
  • Then add grits and butter and mix gently. Keep simmering for 5 minutes while stirring from time to time. Add salt and pepper and mix.
  • Finally add cheese and check the consistency of grits. If you feel they are very thick, add some more milk to adjust the consistency.
  • Now it's the turn for shrimp. Take a skillet. Cook the bacon strips in it until they turn crispy. Then take them away from the heat and chop them. Place them on a side.
  • You will have some bacon grease in the skillet. Leave 2 tbsp and take out the rest. Then add shrimp in this grease. Then add 1 tbsp cajun seasoning and mix them well. Cook for 2 minutes and then take away from the heat. Transfer the shrimp to a container.
  • Now add chopped bell pepper and chopped onion in the same skillet and let them cook until they are softened. Then add minced garlic and cook for 2 minutes. Finally add seasonings to this mixture: smoked paprika, salt, cajun seasoning, and black pepper. Mix them in the veggies.
  • Now add chicken broth in this mixture and simmer it for 5-7 minutes. Then put the shrimp back in the skillet containing chicken broth and veggies mixture. Let it stay on the stove for 1 minute.
  • It’s time to serve. Take out your serving bowls and layer their bottoms with grit. Then put shrimp and veggies on the top. Ladle over the yummy broth. Don't forget to top this scrumptious bowl with green onion, parsley, and chopped bacon bits. Pappadeaux Shrimp and Grits  is ready. Bon Appetit!
