Ramen Noodles Stir Fry Recipe

- 6 ounces Ramen noodles (2 blocks)
- 2 cups Fresh chopped broccoli, bok choy, or veggies of choice
- ½ cup Shelled edamame
- 5 cloves Garlic (2 1/2 tsp minced)
- 1 tbsp Freshly grated ginger (or 1 tsp dried, but fresh is best!)
- ⅓ cup Chopped green onions/scallions (only white part for the stir fry)
- 1 tbsp Oil (vegetable or olive)
Sauce
- 3-4 tbsp Low sodium soy sauce
- 2 tbsp Vegetable or chicken broth
- 2 tsp Toasted sesame oil
- 1 tbsp Sriracha (more or less depending on spice preference)
- 1 tbsp Sweet chili sauce ( adjustable to taste)
By the package instructions, bring a large pot of water to the boil and cook the noodles.
Ramen noodles typically cook in two minutes, but gluten-free noodles will have comparatively a longer time of cooking. Take care not to overcook them, as this could make them excessively chewy or soggy.
Add grated ginger, chopped scallions, minced garlic, and olive or vegetable oil to the hot pan.
Add in the garlic and cook until browned and aromatic.
Add the vegetables and edamame. Let the vegetables cook until they are wilted or almost cut with a fork.
In a small bowl, mix together all the ingredients for the sauce. Add the vegetables, sauce, and cooked noodles simultaneously.
To let the flavors meld, simmer over extremely low heat.
Taste and alter the flavors to your liking. I prefer it spicy and saucy, so I generally add extra soy sauce!
Serve with the remaining chopped scallions and sesame seeds. Have fun!
