San Pedro Shrimp Tray Recipe

Ingredients
  

  • Tomato, sliced lengthwise = 1
  • Butter = 2 tsp
  • Oil = 1 tsp
  • Shrimp, deveined, peeled = 450 g
  • Onion slice = 1/2
  • Green chili pepper sliced lengthwise with all seeds removed = 1
  • Minced garlic = 1 tsp
  • Baby red potatoes, halved, peeved = 6
  • Red chili pepper sliced lengthwise with all seeds removed = 1
  • Garlic powder = 1 tsp
  • Paprika = 1 1/2 tsp
  • Black pepper = 1 tsp
  • Dried thyme = 1/4 tsp
  • Dried basil = 1/4 tsp
  • Oregano = 1 tsp
  • Onion powder = 1 tsp
  • Chili powder = 1 tsp
  • Salt = 1/2 tsp
  • Old bay seasoning = 1/2 tsp

Instructions
 

  • Bring water to a boil in a pot over medium heat. Put the potatoes in the hot water and boil for 5 minutes. Remove and drain the potatoes.
  • Combine all of the spices listed in the ingredient card and mix half of them into your shrimp. Mix well and leave aside for almost 15 minutes. 
  • Heat oil and butter in an iron skillet over medium heat, then sauté garlic until fragrant. Add the shrimp and cook until it becomes golden brown. Remove from the skillet.
  • Sauté your sliced peppers in a pan for about 2 minutes. Add the potatoes and onion and simmer until soft. Mix sometimes.
  • Stir the tomatoes and then also stir the remaining seasoning, then simmer for about 3 minutes. 
  • Put the shrimp and stir to mix. After that simmer for about three to four minutes.
  • Arrange the shrimp & vegetables on a wide serving plate. Enjoy your shrimp with garlic bread.
