Ingredients
  

  • 2 tablespoons Vegetable oil
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 1 pound Pork shoulder, diced
  • 2 cups Green chilies ( roasted, peeled, and chopped)
  • 2 cups Chicken broth
  • 1 teaspoon Ground cumin
  • 1/2 teaspoon Dried oregano
  • Salt and pepper to taste
  • 2 tablespoons All-purpose flour (optional, for thickening)

Instructions
 

  • Take a large bowl. In that bowl, warm the vegetable oil over medium heat. Add the minced garlic and chopped onion, and cook for about 5 minutes, or until the ingredients are soft and fragrant.
  • After adding the diced pork shoulder to the pot, simmer it for 8 to 10 minutes, or until it is browned all over.
  • Cook for a further two to three minutes after adding the chopped green chilies.
  • After adding the chicken broth, mix everything. Stir in the dried oregano, ground cumin, and salt and pepper to taste. After bringing the mixture to a simmer, cook it for 15 to 20 minutes so that the flavors may blend.
  • You can make a slurry by combining 2 tablespoons of all-purpose flour with a small amount of water if you would like a thicker consistency. After adding the slurry, simmer the chili for five more minutes to allow it to thicken.
  • Taste and adjust the seasoning as needed.
  • Your delicious Santiago’s green chilies are ready. Serve it with warm tortillas, or you can use it as a topping for burritos or enchiladas.
