- 1 ½ lbs Small red potatoes
- ½ cup Sour cream
- ½ cup Unsalted butter
- ½ cup Parmesan cheese
- 1 ½ tsp Kosher salt
- 1 tsp Garlic powder
- ¼ tsp Freshly ground black pepper
Wash the potatoes thoroughly. Cut them in quarters. Place them in a Dutch oven.
Add water to the potatoes until it covers the potatoes. Then add a teaspoon of kosher salt and mix it. Boil the potatoes on high heat and when they come to boil, lessen the heat.
Put the cover on the pot or Dutch oven and simmer them on low heat for 20 minutes.
When the potatoes are simmering, save your time by preparing the cheesy mixture. Take a bowl and add sour cream, parmesan cheese, butter, garlic powder, remaining kosher salt, and freshly ground black pepper. Mix all these with the help of an electric mixer to make a smooth mixture.
Check if the potatoes are boiled properly by piercing them with a knife. If done, take them away from the heat and drain the water.
Add the potato quarters to the smooth mixture of cream and butter. With the help of the electric mixer, mix them on medium speed until they are mashed and fully incorporated into the cheese mixture.
