- 1/2 cup Soft dark brown sugar, (approximately 10 g)
- 1/4 cup Black treacle or molasses, (approximately 55 g)
- 1 cup Self-rising flour, (approximately 200 g)
- 8 ounces Unsalted butter (softened), (approximately 220 g)
- 1 cup Golden syrup or light corn syrup, (approximately 200 g)
- 1/2 cup Medium oatmeal or porridge oatmeal, (approximately 110 g)
- 4 tsp Ground ginger
- 2 tsp Nutmeg
- 1 tsp Mixed spice or pumpkin pie spice
- 1 tsp Baking powder
- 2 Large eggs, (beaten)
- 2 tbsp Milk, (if needed)
Preheat the oven to 140 degrees Celsius, or 275 F.
Grease an 8 x 8-inch square cake pan with oil spray.
Melt the butter, golden syrup, brown sugar, and treacle together on low flame. Use a large, heavy-bottomed pan so the ingredients do not stick. It is important to melt the components rather than boil them.
In a large bowl, whisk together the flour, oats, ginger, nutmeg, mixed spices, and baking powder.
Add the butter mixture and stir until all the dry ingredients are fully coated and combined.
Mix eggs in the mixture slowly.
Now pour the prepared batter into the baking pan and bake for one and a half hours. You may give extra time if required. Just make sure the cake is firm and golden brown.
Remove the baking pot from the oven and let it cool completely.
Cut the Parkin into pieces when it is completely cooled down. Store it in an airtight tin for three days to enjoy the perfect taste.
