Ingredients
  

  • 40-50 Trinidad Scorpion peppers, (or a combination of any other hot peppers)
  • 1 head Peeled garlic
  • 8-10 Bandhania/chadon beni/culantro leaves
  • 2 Limes Juice
  • 1 cup White vinegar
  • 2 teaspoons Salt

Instructions
 

  • First of all, make sure that all your utensils and ingredients are washed thoroughly. To avoid any health issues, it is extremely important to take care of the cleanliness.
  • Put peeled garlic, half of the peppers, bandhania leaves, salt, and half cup vinegar in a blender and blend all ingredients until smooth. Now add the remaining peppers and half a cup of the vinegar. To get a smooth consistency, blend them a second time.
  • In the blended mixture, add the juice of two limes. To fully incorporate the lime juice into the sauce, pulse the blender a few times.
  • Pour the sauce into a clean glass container. Do not use metal jars or containers with metallic lids as the acidity of the sauce can react with metal.
  • The key process of curing the hot sauce is about to begin. You can either simmer the sealed jars in water for two to three minutes, or you can leave the jars in sunlight for three to five days. Curing the peppers helps bring out their natural spice and creates a lovely fusion of flavors.
