- Packed light brown sugar = ½ cup

Following is a detailed description of the method on how to make Gluten-free Peanut Butter Cookies:
Step 1
Preheat your oven to 350 degrees F. Then take rimmed baking sheets of large size and line them with unbleached parchment paper. Put them aside when ready.
Step 2
Take a small saucepan. Put the peanut butter and chopped butter in it and melt them together on medium-low heat. Alternatively, you can also melt the butters in the microwave using a microwave-safe bowl.
Step 3
When the butter mix is smooth and completely melted, stir it once and then place it aside to let it cool for some time.
Step 4
Then take a large bowl and add flour, xanthan gum, baking soda, salt and granulated sugar in it. Whisk them all to make a mixture. After that, add light brown sugar and mix again to combine it in the mixture also. If there are any lumps in the mixture, work on them to break them apart.
Step 5
Now push this mixture to the sides of the bowl to make a well in the center and pour the melted peanut butter mixture in the well. Mix and whisk to make the batter.
Step 6
Take a small bowl and crack open the eggs in it. Beat them well. Then add vanilla extract and combine it with eggs.

Pour the egg mix into batter and mix it well. The final dough will be sticky and soft. If you feel like the dough is too soft or sticky, cover it and put it in the refrigerator for 8-10 minutes.
