For Chicken:

  • Chicken breasts = 4
  • Salt = 1-¼ tsp
  • Ground black pepper = 1 tsp
  • Dried oregano = ½ tsp
  • Dried thyme = ½ tsp
  • Dried parsley = ½ tsp

  • Garlic powder = ¼ tsp
  • Olive oil

For Marsala Sauce:

  • Butter = ⅓ cup
  • Prosciutto, diced = 1 slice
  • Minced shallots = 2 tsp
  • Minced garlic = 2 tsp
  • Fresh mushrooms = 8 oz
  • Lombardo dry marsala wine = ¼ cup
  • Chicken stock = 1 cup
  • Cornstarch = 2 tsp
  • Minced fresh parsley = 1 tsp
  • Heavy cream = 2 tbsp
  • Salt, to taste
  • Pepper, to taste

Instructions for Making Carrabba’s Chicken Marsala   Recipe

Following is a detailed description of the method on how to make Carrabba’s Chicken Marsala:

Step 1

Find a medium-sized saucepan in your kitchen and add the butter in it. Melt it on a medium flame. Then increase it to medium-high and saute the prosciutto in the butter for 2-3 minutes.

Step 2

Add mushrooms and shallots in the same pan and saute them also. Make them tender and then add minced garlic. Saute it for 30 seconds.

Step 3

Add marsala wine and simmer the mixture for a minute or so. Add salt and black pepper to taste, and again simmer, this time for 5 minutes.

Step 4

Now mix cornstarch and chicken stock and add this mixture into the saucepan mixture. Again simmer for 5 minutes. Now add heavy cream and parsley in this mixture. Give it a mix and simmer for 3-4 minutes to thicken it. Marsala sauce is ready. Take away from heat and cover until needed.

Step 5

Now is the time to prepare your BBQ grill. Preheat. Take a small bowl and mix all the chicken spice ingredients in it. Crush the spices to make a fine mixture of spices.

Step 6

Take your chicken breasts and brush them with olive oil. Then sprinkle the spice blend generously on both sides of the chicken. Grill the chicken from both sides, 6-8 minutes each side.
